Smoked Banana Bread

Ingredients

  • 4 cups of all-purpose flour
  • 2 teaspoons of baking soda
  • 1/2 teaspoon of salt
  • 1 cup of butter
  • 1.5 cups of brown sugar
  • 4 eggs
  • 4.5 cups of mashed, overripe bananas
  • 1/2 cup of crushed pecans (optional)
  • 1.5 teaspoon of cinnamon (optional)

Directions

Banana bread is one of our favourite easy dessert recipes, and it’s absolutely out of this world when cooked using fiery wood pellets. If you don’t have a pellet grill, try using a smoker box with wood pellets for similar results. The Cast Iron Rib Roaster, when lined with parchment paper, makes an excellent vessel for baking your bread and can even store your bread once cooled.

  1. Preheat the pellet grill to 175˚C (350˚F). Line your cast iron rib roaster with parchment paper to prevent sticking.
  2. Combine the flour, baking soda and salt in a mixing bowl and set aside. In a separate bowl, cream together butter and brown sugar. Add in the eggs and mashed bananas and mix until well blended. Add the dry ingredients that you had set aside and stir until smooth. Pour the batter into the lined cast iron rib roaster. Sprinkle the optional pecans and cinnamon on top of the batter. Leave off the lid for the rib roaster.
  3. Bake inside the preheated grill for approximately 65-75 minutes until a toothpick inserted into the centre of the loaf comes out clean. Remove the cast iron roaster from the grill and let cool until transferring the loaf onto a cutting board or wire rack. You can use the rib roaster to store the loaf in the fridge or wrap it in plastic wrap.
