Pulled Pork On A Bun

Ingredients

 

  • 1 pork shoulder
  • 4 red peppers
  • 4 green peppers
  • 4 cloves garlic
  • 2 tablespoons chilli paste
  • 1 tablespoons peppercorns
  • 2 teaspoons thyme
  • 2 tablespoons olive oil
  • 2 tablespoons soya sauce
  • 2 tablespoons Dijon mustard
  • 3 tablespoons cane sugar
  • 2 tablespoons Kosher salt
  • Sweet chili sauce
  • Hot dog buns

Directions

  1. Mix together salt, pepper, cane sugar, thyme, garlic, olive oil, chilli sauce, Dijon mustard, and soya sauce.
  2. Coat pork shoulder in the mixture thoroughly.
  3. Cook directly on the grids at 107°C (225°F) until pork reaches an internal temperature of 95°C (203°F). This can take anywhere between 12 to 24 hours. A drip tray with wine, beer, or citrus can be used but isn’t required.
  4. Let the pork shoulder rest before serving; rest covered.
  5. Meanwhile, roast red and green peppers, remove seeds, peel, and slice.
  6. Serve pulled pork on a toasted hot dog bun with roasted red pepper and sweet chilli sauce.
